Ingredients



for the crust:



    1. 1/4 c unsalted butter, melted, cooled

    2. 1/4 c packed light brown sugar

    3. 3/4 c all-purpose flour

    4. 1/4 tsp baking soda

    5. 1/4 tsp baking powder

    6. 1/8 tsp salt

    7. 1 Tbsp unsweetened cocoa powder

    8. 1/2 tsp red food coloring



for the filling:


  1. 1/4 c sour cream or Greek yogurt

  2. 1 8oz. package cream cheese, softened

  3. 1 large egg

  4. 3/4 c granulated sugar

  5. 2 Tbsp all-purpose flour

  6. 1 tsp vanilla extract

  7. 2 Tbsp unsweetened cocoa powder

  8. 1 tsp red food coloring


Instructions





    1. Preheat the oven to 350 degrees F.

    2. Line a square 8" x 8" pan with aluminum foil. Set aside.



to make the crust:



    1. In a medium mixing bowl, whisk together brown sugar, flour, soda, baking powder, salt and cocoa powder. Add melted butter and stir until it comes together. Add food coloring and stir until mixed evenly.

    2. Press onto the bottom of prepared pan.



to make the filling:


  1. In a large mixing bowl, mix cream cheese and sour cream with electric mixer until smooth.

  2. Add sugar and mix well.

  3. Add egg, vanilla, flour, cocoa powder and mix until smooth.

  4. Add food coloring and mix until no white streaks remain.

  5. Pour over crust.

  6. Bake for 25 to 28 minutes or until the sides are set and the cheesecake is slightly wiggly when you shake the pan.

  7. Let cool completely.

  8. Chill in the refrigerator until set.

  9. Cut and serve.


Notes





Total time does not include chilling time. The batter might look dark pink after adding the food coloring but it will darken during baking.
